Tender and perfectly delicious homemade muffins, does it get any better than that? No Honey, no it doesn’t. Before we make our Oatmeal Chocolate Chip Muffins there are a couple of things I’d like to talk about that will hopefully not only help you to make the best finally product as far as these delicious muffins are concerned but other homemade baked goods as well. Let’s get started!
Why should I only beat the flour into the batter until it’s just incorporate?
Gluten is the reason why we only beat flour into a batter( or any homemade batter for that matter, not just these muffins) until it’s just incorporated. The longer you beat flour into a batter, the more gluten you produce. The more gluten you produce, the tougher the finally product will be. For this recipe, the dry ingredients (flour, baking powder, baking soda and salt) are combined in a bowl and stirred. The dry ingredients are added to the creamed mixture alternately with the applesauce. Each addition of flour and applesauce only need to beaten into the batter until they are “JUST INCORPORATED”. Over beating a muffin batter can cause your muffins to have peaks and tunnels. We don’t want peaks and tunnels in our Oatmeal Chocolate Chip Muffins.
Why should my eggs, butter and milk be room temperature before baking with them?
When your eggs, butter and milk are room temperature they mix together and make a smooth batter. The smooth texture of the muffin batter traps air and expands when heated in the oven. The expansion makes your muffins light and fluffy. Ok, I hope we’ve learned a little bit more about making muffins with these helpful tips than we knew before. Let’s make Oatmeal Chocolate Chip Muffins together!
Oatmeal Chocolate Chip Muffin Ingredients:
- 1/2 cup butter, room temperature
- 3/4 cup packed brown sugar
- 1 large egg, room temperature
- 1 cup all purpose flour
- 1 Teaspoon baking powder
- 1/4 Teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup applesauce
- 1 cup rolled oats
- 1 cup semisweet chocolate chips
We start our Oatmeal Chocolate Chip Muffins by placing the room temperature butter and sugar in a large bowl. Cream the two ingredients together with an electric mixer until they are well combined. Add one room temperature large egg to the bowl and beat it into the butter/sugar mixture until it’s well combined.
Combine the dry ingredients in the recipe (flour, baking powder, baking soda ,and salt) into a medium bowl, stir the ingredients to combine them. Add the dry ingredients to the creamed mixture alternately with the applesauce. Add the dry ingredients in three batches and the applesauce in 2 batches.
If you’ve never done this in a recipe, here’s how it’s going to go … Add one batch of dry ingredients to the creamed mixture, beat until JUST incorporated – add one batch of applesauce, beat until just incorporated. Add another batch of flour, beat until the flour is “just” incorporated. Add the last batch of applesauce, beat until just incorporated, add the last batch of dry ingredients, beat until just incorporated. Every time you add a batch of flour or applesauce you are only going to mix until the ingredient is just incorporated. The more you beat the batter unnecessarily, the more gluten you produce. The more gluten you produce , the tougher the final product will be.
After the flour and applesauce have been added to the batter stir in the oatmeal and chocolate chips. Your gorgeous muffin batter is ready to go into your paper lined muffin tins. Fill the paper liners three fourths full with the batter. Place the muffin pan into a preheated 350 degree oven and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
